Loaded Potato & Meatloaf Casserole
Ingredients
For the Meatloaf Layer:
- 1.5 lbs ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 egg
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup ketchup
For the Potato Layer:
- 2 lbs potatoes, peeled and sliced
- 1/2 cup sour cream
- 1/4 cup milk
- 2 tbsp butter
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- Salt and pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, mix together the ground beef, onion, garlic, breadcrumbs, milk, egg, Worcestershire sauce, salt, and pepper until fully combined.
- Press the meat mixture evenly into the bottom of a greased 9x13-inch baking dish.
- Spread the ketchup evenly over the top of the meat.
- Bake for 25 minutes.
- Meanwhile, boil the sliced potatoes in a pot of salted water until tender (about 15 minutes).
- Drain and mash the potatoes with sour cream, milk, and butter. Season with salt and pepper to taste.
- Spread the mashed potatoes evenly over the partially baked meatloaf.
- Top with shredded cheddar and chopped green onions.
- Return to the oven and bake for an additional 20 minutes, or until the cheese is melted and bubbly.
- Let the casserole rest for 10 minutes before slicing and serving.
