Loaded Potato & Meatloaf Casserole

Ingredients

For the Meatloaf Layer:

  • 1.5 lbs ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup ketchup

For the Potato Layer:

  • 2 lbs potatoes, peeled and sliced
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 2 tbsp butter
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix together the ground beef, onion, garlic, breadcrumbs, milk, egg, Worcestershire sauce, salt, and pepper until fully combined.
  3. Press the meat mixture evenly into the bottom of a greased 9x13-inch baking dish.
  4. Spread the ketchup evenly over the top of the meat.
  5. Bake for 25 minutes.
  6. Meanwhile, boil the sliced potatoes in a pot of salted water until tender (about 15 minutes).
  7. Drain and mash the potatoes with sour cream, milk, and butter. Season with salt and pepper to taste.
  8. Spread the mashed potatoes evenly over the partially baked meatloaf.
  9. Top with shredded cheddar and chopped green onions.
  10. Return to the oven and bake for an additional 20 minutes, or until the cheese is melted and bubbly.
  11. Let the casserole rest for 10 minutes before slicing and serving.
