Old-School Cornflake Jam Bars with Golden Syrup
These nostalgic Cornflake Jam Bars are the ultimate throwback treat—crunchy cornflakes mixed with buttery golden syrup, a fruity layer of jam, all on a simple biscuit base. They're perfect for after-school snacks, potlucks, or just when you need something sweet and satisfying!
Ingredients:
- 7 oz (200g) digestive biscuits (or graham crackers), crushed
- 3.5 oz (100g) butter, melted
- 3.5 oz (100g) golden syrup (or light corn syrup)
- 1.75 oz (50g) caster sugar (or granulated sugar)
- 1 tsp vanilla extract
- 4 tbsp strawberry or raspberry jam
- 5.25 oz (150g) cornflakes
- 3.5 oz (100g) white chocolate, melted (optional, for drizzling)
Instructions:
- Crush the biscuits into fine crumbs using a food processor or a zip-top bag and rolling pin. Place them in a large bowl.
- In a saucepan over low heat, melt the butter and golden syrup together. Stir in the sugar and vanilla until everything's smooth and combined.
- Line or grease an 8x8 inch (20x20cm) pan. Spread the jam evenly over the bottom.
- Pour the melted syrup mixture over the crushed biscuits and stir until the crumbs are well-coated.
- Fold in the cornflakes gently, making sure they’re evenly coated too.
- Press the mixture firmly into the pan over the jam layer. Use the back of a spoon or your hands to pack it down well.
- If you’re using white chocolate, melt it and drizzle over the top.
- Chill in the fridge for at least 2 hours, then cut into bars or squares.
