 Classic Baked Cheesecake

Ingredients:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons sugar
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream

Instructions:

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, mix the graham cracker crumbs, melted butter, and 2 tablespoons of sugar until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  3. In a large bowl, beat the softened cream cheese and 1 cup of sugar until smooth and creamy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Fold in the sour cream until the batter is smooth. Pour the filling over the crust.
  6. Bake for 50 to 60 minutes, or until the center is mostly set but still slightly jiggly in the middle.
  7. Turn off the oven, crack the oven door open, and let the cheesecake cool inside for 1 hour.
  8. Refrigerate for at least 4 hours (or overnight) before serving for the best texture and flavor.
