Easy Crockpot Dinner

Ingredients:

  • 1 can cream of chicken soup
  • 1 large block Velveeta cheese
  • 1 can Rotel tomatoes with green chilies (undrained)
  • 1 box bowtie pasta
  • 2.25 lbs ground beef
  • 1 (8 oz) block cream cheese

Instructions:

  1. Brown the Beef:
    In a skillet over medium heat, cook the ground beef until it’s fully browned and no longer pink, about 5–7 minutes. Drain off any excess grease.

  2. Start the Crockpot:
    Add the cream of chicken soup, Rotel tomatoes (with the juice), cubed Velveeta cheese, and cream cheese to your crockpot. Stir to combine.

  3. Add the Meat:
    Mix in the cooked ground beef, stir everything well, then cover and cook on high for about 1.5 hours, stirring occasionally until smooth and creamy.

  4. Cook the Pasta:
    While the crockpot mixture is cooking, boil the bowtie pasta in a large pot according to the package directions until al dente (about 8–10 minutes). Before draining, save about a cup of pasta water.

  5. Combine & Adjust:
    Once the crockpot mixture is fully melted and creamy, gently fold in the cooked pasta. If the sauce is too thick, add some reserved pasta water a little at a time until you get the consistency you like.

  6. Serve & Enjoy:
    Dish it up hot and serve with your favorite sides or just as-is. It’s perfect for a cozy family dinner!
