Delicious Cheese Soufflé
Ingredients:
3.5 oz (100 g) shredded cheese (like Gruyère or Swiss)
2 tbsp (30 g) butter
2 tbsp (30 g) all-purpose flour
1 cup (250 ml) milk
3 large eggs, separated
Salt and pepper, to taste
A pinch of nutmeg (optional)
Instructions:
1. Preheat your oven to 375°F (190°C).
2. Butter a few ramekins and lightly dust them with flour to keep the soufflé from sticking.
3. In a saucepan over medium heat, melt the butter. Add the flour and whisk for about 2 minutes to form a roux.
4. Gradually pour in the milk, whisking constantly to avoid lumps. Cook for about 5 minutes, until the mixture thickens.
5. Remove from heat and stir in the shredded cheese, salt, pepper, and nutmeg. Mix until the cheese is melted and smooth.
6. In a separate bowl, separate the eggs. Stir the yolks into the cheese mixture one at a time.
7. In another bowl, beat the egg whites until stiff peaks form.
8. Gently fold the egg whites into the cheese mixture using a spatula. Don’t overmix—keep it light and airy.
9. Spoon the mixture into the prepared ramekins, filling each about two-thirds full.
10. Bake for 20 to 25 minutes, or until puffed up and golden on top.
11. Serve immediately—soufflés are best enjoyed fresh from the oven before they deflate!
