Blueberry Lemon Heaven Cookies

Soft, buttery cookies bursting with tangy lemon and juicy blueberries—like a bite of sunshine!

Ingredients:

For the cookies:

  • 1 cup blueberries (fresh or frozen)
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest

For the glaze:

  • 1/4 cup powdered sugar
  • 2 tablespoons lemon juice
  • 1/4 teaspoon lemon zest

Directions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Make the blueberry filling: In a small saucepan, combine blueberries, granulated sugar, and lemon juice. Cook over medium heat for about 10 minutes, stirring occasionally, until the berries burst and the mixture thickens. Let it cool completely.
  3. Mix the dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt.
  4. Cream the butter and sugar: In a large bowl, beat the softened butter and powdered sugar together until light and fluffy. Add the egg, vanilla, and lemon zest, then beat again until smooth.
  5. Combine: Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Shape and fill: Roll the dough into 1-inch balls and place them on the prepared baking sheet. Gently press each one to flatten a bit. Spoon a little of the cooled blueberry mixture into the center of each cookie.
  7. Bake: Pop them in the oven for 12–15 minutes, or until the edges turn a light golden brown. Let them cool on a wire rack.
  8. Glaze it up: In a small bowl, whisk together powdered sugar, lemon juice, and lemon zest. Drizzle the glaze over the cooled cookies.
