Baked Cod with Lemon and Garlic
Ingredients:
- 4 cod fillets (6 oz each)
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 lemon (zested and juiced)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon paprika (optional, for color and extra flavor)
- 2 tablespoons fresh parsley, chopped (for garnish)
- Lemon slices, for serving
Instructions:

Preheat the Oven:
Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper. -
Make the Marinade:
In a small bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, salt, pepper, and paprika. -
Season the Fish:
Place the cod fillets in the prepared baking dish. Spoon the lemon garlic marinade evenly over the top of each fillet, making sure they’re well coated. -
Bake the Cod:
Bake for 12 to 15 minutes, or until the fish is opaque and flakes easily with a fork. Thicker fillets may need a minute or two longer. -
Garnish and Serve:
Take the cod out of the oven, sprinkle with chopped parsley, and add a few lemon slices on the side. Serve right away with your favorite sides like roasted veggies, rice, or a fresh salad.
