Royal Bibingka (Filipino Rice Cake)
Ingredients:
- 3 cups glutinous rice flour
- 1 can coconut milk
- ¾ can condensed milk (reserve the rest for topping)
- 1 cup evaporated milk
- 3 tbsp melted butter
- 3 eggs
- ½ cup sugar
- ¼ tsp salt
- 1 tsp vanilla extract
Toppings:
- Remaining condensed milk
- Grated cheese
Instructions:
- Preheat your oven to 350°F.
- In a large bowl, whisk together the eggs, sugar, vanilla extract, and salt until well combined.
- Add the melted butter, condensed milk, coconut milk, and evaporated milk. Mix well.
- Gradually add the glutinous rice flour, stirring continuously until you get a smooth, runny batter. Strain if necessary to remove lumps.
- Pour the batter into a greased baking pan and bake for 30–35 minutes.
- Remove from the oven, spread the remaining condensed milk on top, and sprinkle with grated cheese.
- Bake for another 15 minutes or until the top turns golden brown.
- Let it cool slightly before serving. Enjoy!
