Royal Bibingka (Filipino Rice Cake)

Ingredients:

  • 3 cups glutinous rice flour
  • 1 can coconut milk
  • ¾ can condensed milk (reserve the rest for topping)
  • 1 cup evaporated milk
  • 3 tbsp melted butter
  • 3 eggs
  • ½ cup sugar
  • ¼ tsp salt
  • 1 tsp vanilla extract

Toppings:

  • Remaining condensed milk
  • Grated cheese

Instructions:

  1. Preheat your oven to 350°F.
  2. In a large bowl, whisk together the eggs, sugar, vanilla extract, and salt until well combined.
  3. Add the melted butter, condensed milk, coconut milk, and evaporated milk. Mix well.
  4. Gradually add the glutinous rice flour, stirring continuously until you get a smooth, runny batter. Strain if necessary to remove lumps.
  5. Pour the batter into a greased baking pan and bake for 30–35 minutes.
  6. Remove from the oven, spread the remaining condensed milk on top, and sprinkle with grated cheese.
  7. Bake for another 15 minutes or until the top turns golden brown.
  8. Let it cool slightly before serving. Enjoy!
