🧾 Ingredients:

Chicken Rolls:

  • 10 thin boneless, skinless chicken breasts
  • 1 lb hot Italian sausage
  • 6 oz cream cheese, softened
  • 1½ cups sharp cheddar cheese, shredded
  • ⅓ cup green onions, sliced
  • 10 jalapeños, halved and deseeded
  • 3 packs (36 oz) bacon
  • 2 tbsp Cajun seasoning
  • 1 tbsp black pepper
  • BBQ sauce for brushing

👨‍🍳 Directions:

1️⃣ Preheat the Smoker

Set your smoker to 250°F (121°C).

2️⃣ Make the Filling

In a bowl, mix the sausage, cream cheese, cheddar cheese, and green onions until well combined.

3️⃣ Prep the Jalapeños

Slice the jalapeños in half lengthwise and remove the seeds. Stuff each half with the sausage mixture.

4️⃣ Season the Chicken

Lay the chicken breasts flat on a baking sheet and season both sides with Cajun seasoning and black pepper.

5️⃣ Roll & Wrap

  • Place a stuffed jalapeño on each chicken breast.
  • Roll the chicken tightly around the jalapeño.
  • Wrap each roll with bacon and secure with toothpicks.

6️⃣ Smoke the Rolls

Smoke the rolls for about 4 hours, flipping them halfway through for even cooking.

7️⃣ Glaze & Finish

Brush the rolls with BBQ sauce and continue smoking for another 20–30 minutes, or until the internal temperature reaches 165°F (74°C).

8️⃣ Serve & Enjoy!
