Reese’s Peanut Butter Chocolate Chip Cookie Bites

Ingredients (Makes ~24 Cookie Bites)

For the Dough:

  • ½ cup (1 stick) unsalted butter, softened
  • ½ cup creamy peanut butter
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Mix-Ins:

  • ½ cup mini or regular chocolate chips
  • ½ cup chopped Reese’s peanut butter cups (mini or regular)

Optional Topping:

  • Flaky sea salt

Instructions

1. Preheat & Prep
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. Make the Dough

  • In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the egg and vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix into the wet ingredients until combined.
  • Fold in the chocolate chips and chopped Reese’s peanut butter cups.

3. Scoop & Bake

  • Roll the dough into 1-inch balls (or use a small cookie scoop).
  • Place on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 8-10 minutes, or until the edges are set but the centers remain soft.

4. Cool & Enjoy

  • Let the cookies cool on the baking sheet for 5 minutes (they’ll firm up as they cool).
  • Sprinkle with flaky sea salt if desired.
