Healthy Zucchini & Oatmeal Pizza Recipe
(A delicious and nutritious alternative to traditional pizza!)
Ingredients:
- 1 large zucchini (about 300g / 10.5oz), grated
- 4 tablespoons (40g) rolled oats
- 100g (3.5oz) mozzarella cheese, shredded
- 2 large eggs
- 2 cloves garlic, minced
- 1 teaspoon dried basil (or 2 tablespoons fresh, chopped)
- Salt to taste
- Black pepper to taste
Instructions:

Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.

Prepare the zucchini:
- Grate the zucchini and place it in a clean kitchen towel or cheesecloth.
- Squeeze out as much excess moisture as possible to ensure a crispy base.

Make the batter:
- In a mixing bowl, combine the grated zucchini, rolled oats, shredded mozzarella, eggs, minced garlic, basil, salt, and black pepper.
- Stir well until all ingredients are fully incorporated.

Shape the pizza base:
- Spread the mixture evenly onto the prepared baking sheet, forming a thin, round crust.

Bake the crust:
- Place the baking sheet in the oven and bake for 15–20 minutes, or until the edges are golden brown and slightly crispy.

Optional Toppings (before final baking):
- You can add extra shredded cheese, sliced zucchini, or any preferred toppings before the final bake.

- Bake for another 5–10 minutes until the cheese is melted and bubbly.
