Healthy Zucchini & Oatmeal Pizza Recipe

(A delicious and nutritious alternative to traditional pizza!)

Ingredients:

  • 1 large zucchini (about 300g / 10.5oz), grated
  • 4 tablespoons (40g) rolled oats
  • 100g (3.5oz) mozzarella cheese, shredded
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil (or 2 tablespoons fresh, chopped)
  • Salt to taste
  • Black pepper to taste

Instructions:

  1. Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.

  2. Prepare the zucchini:

    • Grate the zucchini and place it in a clean kitchen towel or cheesecloth.
    • Squeeze out as much excess moisture as possible to ensure a crispy base.
  3. Make the batter:

    • In a mixing bowl, combine the grated zucchini, rolled oats, shredded mozzarella, eggs, minced garlic, basil, salt, and black pepper.
    • Stir well until all ingredients are fully incorporated.
  4. Shape the pizza base:

    • Spread the mixture evenly onto the prepared baking sheet, forming a thin, round crust.
  5. Bake the crust:

    • Place the baking sheet in the oven and bake for 15–20 minutes, or until the edges are golden brown and slightly crispy.
  6. Optional Toppings (before final baking):

    • You can add extra shredded cheese, sliced zucchini, or any preferred toppings before the final bake.
  7. Final Bake:

    • Bake for another 5–10 minutes until the cheese is melted and bubbly.
  8. Serve & Enjoy!

    • Slice and serve warm. This healthy pizza is perfect as a snack or a light meal.
