Ingredients

For the Filling:

  • 4 cups cherries (fresh, frozen, or canned), pitted
  • ½ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

For the Topping:

  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, melted
  • ½ cup milk

Instructions

  1. Preheat the Oven: Set your oven to 375°F (190°C) and lightly grease a 9×9-inch baking dish.
  2. Make the Filling: In a large bowl, mix the cherries, sugar, cornstarch, lemon juice, and vanilla extract. Stir until the cherries are well coated, then pour into the prepared baking dish.
  3. Prepare the Topping: In another bowl, whisk together the flour, sugar, baking powder, and salt. Add the melted butter and milk, stirring until just combined. The batter will be thick.
  4. Assemble the Cobbler: Drop spoonfuls of the batter over the cherry mixture, spreading it gently to cover most of the surface.
  5. Bake: Bake for 35-40 minutes, or until the topping is golden brown and the cherry filling is bubbling.
  6. Cool & Serve: Let the cobbler cool for 10-15 minutes before serving.
