Ingredients

- 1 ½ cups graham cracker crumbs (about 10–12 crushed sheets)
- ¼ cup granulated sugar
- ½ tsp ground cinnamon
- 6 tbsp unsalted butter, melted

- 4 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs, room temperature

- 1 cup powdered sugar, sifted

Instructions
Step 1: Prep the Oven & Pan
Preheat the oven to 325°F (165°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
Step 2: Make the Crust
- In a medium bowl, combine graham cracker crumbs, sugar, cinnamon, and melted butter until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of the prepared pan, using a spoon or the bottom of a glass.
- Bake for 8–10 minutes, then set aside to cool.

- In a large bowl, beat the softened cream cheese and sugar together until smooth and creamy.
