Ingredients

For the Crust:

  • 1 ½ cups graham cracker crumbs (about 10–12 crushed sheets)
  • ¼ cup granulated sugar
  • ½ tsp ground cinnamon
  • 6 tbsp unsalted butter, melted

For the Cheesecake Filling:

  • 4 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs, room temperature

For the Cinnamon Swirl:

  • ¼ cup granulated sugar
  • 1 ½ tsp ground cinnamon

For the Glaze:

  • 1 cup powdered sugar, sifted
  • 2–3 tbsp milk or heavy cream
  • ½ tsp vanilla extract
  • ¼ tsp ground cinnamon

Instructions

Step 1: Prep the Oven & Pan

Preheat the oven to 325°F (165°C). Grease a 9-inch springform pan and line the bottom with parchment paper.

Step 2: Make the Crust

  1. In a medium bowl, combine graham cracker crumbs, sugar, cinnamon, and melted butter until the mixture resembles wet sand.
  2. Press the mixture firmly into the bottom of the prepared pan, using a spoon or the bottom of a glass.
  3. Bake for 8–10 minutes, then set aside to cool.

Step 3: Make the Cheesecake Filling

  1. In a large bowl, beat the softened cream cheese and sugar together until smooth and creamy.
  2. Mix in vanilla extract.
