Cinnamon Roll Cheesecake Bars 🍰✨

Ingredients

For the Crust:

  • 1 can (8-count) refrigerated cinnamon rolls 🥮
  • 1 tbsp melted butter 🧈

For the Cheesecake Filling:

  • 8 oz cream cheese, softened 🧀
  • ¼ cup granulated sugar 🍚
  • 1 tsp vanilla extract
  • 1 large egg 🥚

For the Cinnamon Swirl:

  • 2 tbsp brown sugar
  • 1 tsp ground cinnamon 🌿
  • 1 tbsp melted butter 🧈

Instructions

  1. Preheat & Prep – Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.

  2. Make the Crust – Flatten the cinnamon rolls and press them into the bottom of the pan, sealing the edges to form a crust. Brush with melted butter.

  3. Mix the Cheesecake Filling – In a bowl, beat the cream cheese, sugar, vanilla, and egg until smooth. Spread evenly over the crust.

  4. Add the Cinnamon Swirl – Mix brown sugar, cinnamon, and melted butter. Drizzle over the cheesecake layer and swirl with a knife or toothpick.

  5. Bake – Bake for 25–30 minutes or until the center is set. Let cool, then refrigerate for at least 2 hours.

  6. Drizzle & Serve – Warm the icing that came with the cinnamon rolls and drizzle over the bars before serving.
