Carrot Raisin Oatmeal Yogurt Cake 🥕✨

This soft, warmly spiced cake is naturally sweetened and made with wholesome ingredients—a healthier take on a classic carrot cake!

Ingredients:

  • 🌾 1 ½ cups (135g) oat flour (or blended rolled oats)
  • 🥕 1 cup (100g) grated carrots
  • 🧂 1 tsp baking powder
  • 🧂 ½ tsp baking soda
  • 🧂 ½ tsp salt
  • 🍂 1 tsp cinnamon
  • 🍯 ⅓ cup (80ml) maple syrup or honey
  • 🥚 2 large eggs (or flax eggs for a vegan version)
  • 🥛 ½ cup (120g) Greek yogurt (or dairy-free yogurt)
  • 🧈 ¼ cup (60ml) melted coconut oil or butter
  • 🌿 1 tsp vanilla extract
  • 🍇 ⅓ cup (50g) raisins

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a baking pan or line it with parchment paper.
  2. Prepare the dry ingredients: In a large bowl, whisk together oat flour, baking powder, baking soda, salt, and cinnamon.
  3. Mix the wet ingredients: In a separate bowl, whisk the eggs (or flax eggs), maple syrup (or honey), Greek yogurt, melted coconut oil (or butter), and vanilla extract until smooth.
  4. Combine: Gradually add the wet ingredients to the dry ingredients, stirring gently until well mixed.
  5. Fold in the grated carrots and raisins, ensuring they’re evenly distributed.
  6. Bake: Pour the batter into the prepared pan and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool & Serve: Let the cake cool before slicing. Enjoy as is, or top with a light yogurt glaze or cream cheese frosting!

Tip: For extra crunch, add a handful of chopped walnuts or pecans!
