Pineapple Dream Dessert

Ingredients

For the Crust:

  • ½ cup unsalted butter
  • 2 ½ cups graham cracker crumbs (about 2 sleeves)

For the Layers:

  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar, sifted
  • 4 oz cream cheese, softened
  • 8 oz Cool Whip, fat-free
  • 20 oz crushed pineapple, well-drained

Instructions

Prepare the Crust:

  1. Preheat your oven to 300°F.
  2. Melt the butter and let it cool slightly.
  3. In a bowl, combine the graham cracker crumbs with the melted butter until well mixed.
  4. Press 2 cups of the mixture into a 9x9-inch square pan and bake for 8–10 minutes. Let it cool completely.

Make the Creamy Layer:

  1. Using a mixer, beat the softened butter and cream cheese until smooth and creamy.
  2. Reduce the mixer speed and gradually add the sifted powdered sugar.
  3. Once incorporated, increase the speed and beat for about a minute. Stir in 1 heaping tablespoon of the drained pineapple.
  4. Spread this creamy layer evenly over the cooled crust.

Assemble & Chill:

  1. Gently fold the remaining drained pineapple into the Cool Whip. Spread this over the cream cheese layer.
  2. Sprinkle the remaining graham cracker crumbs on top for a finishing touch.
  3. Refrigerate for at least 4 hours or overnight for the best texture.

Notes

  • No-Bake Option: If you prefer to skip the baking step, simply press the crust mixture into the pan and refrigerate for 20 minutes to allow the butter to set and hold the crust together.
