Baked Salmon in Foil with Asparagus – Quick & Healthy

Ingredients:

  • 4 (6-ounce) salmon fillets (skin-on for extra moisture)
  • 1 pound fresh asparagus (trimmed)
  • 2 tablespoons olive oil
  • 1 lemon (sliced)
  • 3 cloves garlic (minced)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Optional: Fresh dill, parsley, or a sprinkle of paprika for extra flavor

Instructions:

1. Preheat the oven
Set your oven to 400°F (200°C).

2. Prep the ingredients
Pat the salmon fillets dry and trim the tough ends off the asparagus.

3. Assemble the foil packets

  • Lay out a large piece of foil on a baking sheet.
  • Place a handful of asparagus in the center.
  • Set a salmon fillet on top.
  • Drizzle with olive oil and squeeze fresh lemon juice over everything.
  • Add minced garlic, salt, pepper, and any optional herbs.

4. Seal the packets
Fold the foil over the salmon and asparagus, sealing the edges tightly.

5. Bake
Bake for 20-25 minutes, until the salmon is flaky and cooked through.

6. Serve & enjoy!
Carefully open the foil packets and serve warm.
