Light, creamy, and bursting with lemony goodness—this no-bake lemon icebox pie is the ultimate chill dessert. With a buttery graham cracker crust and a tangy, velvety lemon filling, it’s perfect for summer days, BBQs, or when you just need something sweet and easy.

Ingredients

For the Crust:

  • 2 cups graham cracker crumbs (about 14 crackers)
  • 6 tbsp unsalted butter, melted
  • ¼ cup granulated sugar

For the Lemon Filling:

  • 1 (14 oz) can sweetened condensed milk
  • 8 oz cream cheese, softened
  • ½ cup fresh lemon juice (from about 3–4 lemons)
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 1 cup cold heavy whipping cream
  • ¼ cup powdered sugar

Optional Toppings:

  • Whipped cream
  • Lemon slices
  • Extra lemon zest

How to Make It

1. Start with the Crust:

  • In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until everything’s combined.
  • Press the mixture into a 9-inch pie dish, nice and firm.
  • Pop it in the fridge for about 20–30 minutes to set while you make the filling.

2. Whip Up the Filling:

  • In a large bowl, beat the cream cheese and sweetened condensed milk until smooth.
  • Add in the lemon juice, zest, and vanilla. Mix until it’s creamy and dreamy.
  • In a separate bowl, whip the cold heavy cream with the powdered sugar until stiff peaks form.
  • Gently fold the whipped cream into the lemon mixture—don’t overmix!

3. Put It All Together:

  • Spoon the filling into the chilled crust and smooth the top.
  • Cover and refrigerate for at least 4 hours—or overnight if you can wait.

4. Serve It Up:

  • Right before serving, top with whipped cream, lemon slices, and a little zest if you’re feeling fancy.
  • Slice, serve, and watch it disappear!

Tips & Storage:

  • Make-Ahead Friendly: Perfect to prep the day before.
  • Stays Fresh: Store in the fridge for up to 5 days.
  • Freeze It: Yup, it freezes well—just thaw in the fridge before serving.

Fun Variations:

  • Lemon-Orange Twist: Swap in ¼ cup orange juice for a citrusy blend.
  • Coconut Lover’s Dream: Mix ½ cup shredded coconut into the filling.
  • Berry on Top: Add fresh strawberries or blueberries before serving.

It’s cool, creamy, and packed with lemon flavor. No oven required, just good vibes and a fork. Enjoy!
