Mozzarella-Stuffed Onion Rings with Garlic Butter
Ingredients:
- 2 large onions
- 7 oz (200 g) mozzarella cheese, cut into cubes
- ¾ cup all-purpose flour
- 2 eggs
- 1½ cups breadcrumbs
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ cup (1 stick) butter
- 2 garlic cloves, minced
- Oil, for frying
Instructions:
Step 1: PREP THE ONIONS
- Peel the onions and slice them into ½-inch thick rings. Separate the layers to create onion rings.
Step 2: STUFF THE ONIONS
- Take one onion ring and place a cube of mozzarella inside. Cover with another ring of similar size to form a “sandwich.” Repeat with the rest.
Step 3: SET UP THE BREADING STATION
- In one bowl, mix the flour, salt, pepper, and garlic powder.
- In another bowl, beat the eggs.
- In a third bowl, add the breadcrumbs.
Step 4: COAT THE RINGS
- Dip each stuffed ring in the flour mix, then the beaten eggs, and finally coat it well with breadcrumbs. Press gently to help it stick.
Step 5: FRY
- Heat oil in a large skillet over medium heat. Fry the stuffed onion rings for about 3–4 minutes on each side, or until golden and crispy. Drain on paper towels.
Step 6: MAKE THE GARLIC BUTTER
- In a small saucepan, melt the butter over low heat. Add the minced garlic and cook for 1–2 minutes, just until fragrant.
Step 7: SERVE
- Serve the hot mozzarella-stuffed onion rings drizzled with warm garlic butter.
Enjoy!
