Mozzarella-Stuffed Onion Rings with Garlic Butter

Ingredients:

  • 2 large onions
  • 7 oz (200 g) mozzarella cheese, cut into cubes
  • ¾ cup all-purpose flour
  • 2 eggs
  • 1½ cups breadcrumbs
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ cup (1 stick) butter
  • 2 garlic cloves, minced
  • Oil, for frying

Instructions:

Step 1: PREP THE ONIONS

  • Peel the onions and slice them into ½-inch thick rings. Separate the layers to create onion rings.

Step 2: STUFF THE ONIONS

  • Take one onion ring and place a cube of mozzarella inside. Cover with another ring of similar size to form a “sandwich.” Repeat with the rest.

Step 3: SET UP THE BREADING STATION

  • In one bowl, mix the flour, salt, pepper, and garlic powder.
  • In another bowl, beat the eggs.
  • In a third bowl, add the breadcrumbs.

Step 4: COAT THE RINGS

  • Dip each stuffed ring in the flour mix, then the beaten eggs, and finally coat it well with breadcrumbs. Press gently to help it stick.

Step 5: FRY

  • Heat oil in a large skillet over medium heat. Fry the stuffed onion rings for about 3–4 minutes on each side, or until golden and crispy. Drain on paper towels.

Step 6: MAKE THE GARLIC BUTTER

  • In a small saucepan, melt the butter over low heat. Add the minced garlic and cook for 1–2 minutes, just until fragrant.

Step 7: SERVE

  • Serve the hot mozzarella-stuffed onion rings drizzled with warm garlic butter.

Enjoy!
