Garlic Parmesan Chicken Meatloaf
Ingredients
1½ pounds ground chicken
½ cup grated Parmesan cheese
½ cup breadcrumbs (panko or regular)
2 cloves garlic, minced
1 small onion, finely diced
1 egg
⅓ cup milk
1 tablespoon Italian seasoning
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons fresh parsley, chopped (optional)
¼ cup grated mozzarella (optional topping)
1 tablespoon olive oil
Directions
Start by preheating your oven to 375°F (190°C). Prepare a baking sheet with parchment paper or lightly grease a loaf pan.
In a large bowl, combine the ground chicken, Parmesan cheese, breadcrumbs, garlic, onion, egg, milk, Italian seasoning, salt, pepper, and parsley. Stir until everything is just mixed—be careful not to overmix.
Shape the mixture into a loaf and place it onto the prepared baking sheet or into the loaf pan.
Drizzle the olive oil over the top to help it brown as it cooks.
Bake for 45 to 50 minutes, or until the internal temperature reaches 165°F (75°C).
If you are using mozzarella, sprinkle it over the top during the last 5 minutes of baking and allow it to melt.
Once done, let the meatloaf rest for about 5 minutes before slicing. Serve with your favorite sides.
