Condensed Milk & Coconut Koeksisters

Wow!

This is a must make for breakfast, today or for the weekend.

It's easy, no need for yeast - but I would go easy on the syrup!

Ingredients:

For the dough:

2 cups cake flour

2 tsp baking powder

¼ tsp salt

2 tbsp sugar

½ cup desiccated coconut

1 egg

2 tbsp melted butte

½ cup milk (or enough to form a soft dough)


For the syrup:

1½ cups sugar

½ cup water

½ cup condensed milk

1 tsp vanilla essence


For frying:

Oil, for deep frying


Instructions:

Make syrup first: Heat all ingredients in a pot until sugar dissolves. Simmer for 5–7 minutes. Cool and refrigerate.


In a bowl, mix dry dough ingredients, then add egg, butter, and milk. Knead lightly.


Roll out and cut into strips. Twist or braid strips if desired.


Heat oil and fry the koeksisters until golden and cooked through.


Dip hot koeksisters into cold syrup immediately.


Let them rest on a wire rack or baking paper. Best served chilled!
