Baked Potato Chicken and Broccoli Casserole

Ingredients:

- 2 large potatoes, diced

- 2 cups cooked chicken, shredded

- 2 cups broccoli florets

- 1 cup shredded cheddar cheese

- 1 cup sour cream

- 1/2 cup milk

- 2 cloves garlic, minced

- 1 teaspoon salt

- 1 teaspoon black pepper

- 2 tablespoons olive oil

Instructions:

1. Preheat oven to 400°F (200°C).

2. In a large bowl, toss diced potatoes with olive oil, salt, and black pepper.

3. Spread potatoes on a baking sheet and bake for 20 minutes until tender.

4. In a large mixing bowl, combine cooked chicken, broccoli, shredded cheddar cheese, sour cream, milk, and minced garlic.

5. Add baked potatoes to the mixture and stir until well combined.

6. Transfer the mixture to a greased baking dish.

7. Bake in the preheated oven for 25-30 minutes until bubbly and golden on top.
