Baked Burrito Casserole

Hearty Mexican-Inspired Beef and Cheese Casserole

Ingredients:

1 pound ground beef

1 small onion, chopped

1 pack taco seasoning

1 can refried beans

1 can cream of mushroom soup, undiluted

1/2 cup sour cream

1 pack large flour tortillas

2 1/2 cups shredded Mexican blend cheese

Directions:

Preheat oven to 350 degrees F.

In a large skillet, cook ground beef and onion until beef is no longer pink; drain.

Stir in taco seasoning and refried beans; heat through.

In a bowl, blend mushroom soup with sour cream.

Spread half of the soup mixture in the bottom of a baking dish.

Place a layer of tortillas over the soup mixture, tearing to fit.

Layer half of the beef mixture over the tortillas and sprinkle with about 1 cup of cheese.

Repeat layers ending with a layer of cheese.

Bake for 20 minutes or until cheese is melted and bubbly.
