Texas Sheet Cake Cookies
These soft, fudgy cookies are like little bites of classic Texas sheet cake, complete with a rich, chocolatey glaze.
Ingredients
For the Cookies:
- ½ cup unsalted butter
- ⅓ cup unsweetened cocoa powder
- 1 large egg
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 teaspoon vanilla extract
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup all-purpose flour
For the Icing:
- ¼ cup unsalted butter
- 2 tablespoons unsweetened cocoa powder
- 3 tablespoons milk
- 1 ½ cups powdered sugar
- ½ teaspoon vanilla extract
Instructions
-
Preheat & Prep:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. -
Make the Cookie Dough:
In a small saucepan, melt the butter and cocoa powder over medium heat. Stir until smooth, then remove from heat and let cool slightly. -
In a mixing bowl, whisk together the egg, granulated sugar, brown sugar, vanilla extract, baking soda, and salt.
-
Add the cooled chocolate mixture and mix until well combined. Stir in the flour until just incorporated—don't overmix!
-
Bake the Cookies:
Drop tablespoon-sized scoops of dough onto the prepared baking sheet. Bake for 8–10 minutes, or until the cookies are set but still soft. Let them cool slightly on the baking sheet. -
Make the Icing:
While the cookies bake, melt the butter, cocoa powder, and milk in a small saucepan over low heat. Remove from heat and whisk in the powdered sugar and vanilla extract until smooth. -
Glaze & Set:
Spoon the warm icing over the slightly cooled cookies, allowing it to spread naturally. Let the icing set before serving.
Recipe Notes:
- Glaze the cookies while they're still warm for that perfect Texas sheet cake texture.
- Allow the icing to set completely before stacking or storing to avoid smudging.
