Texas Sheet Cake Cookies

These soft, fudgy cookies are like little bites of classic Texas sheet cake, complete with a rich, chocolatey glaze.

Ingredients

For the Cookies:
  • ½ cup unsalted butter
  • ⅓ cup unsweetened cocoa powder
  • 1 large egg
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup all-purpose flour
For the Icing:
  • ¼ cup unsalted butter
  • 2 tablespoons unsweetened cocoa powder
  • 3 tablespoons milk
  • 1 ½ cups powdered sugar
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat & Prep:
    Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. Make the Cookie Dough:
    In a small saucepan, melt the butter and cocoa powder over medium heat. Stir until smooth, then remove from heat and let cool slightly.

  3. In a mixing bowl, whisk together the egg, granulated sugar, brown sugar, vanilla extract, baking soda, and salt.

  4. Add the cooled chocolate mixture and mix until well combined. Stir in the flour until just incorporated—don't overmix!

  5. Bake the Cookies:
    Drop tablespoon-sized scoops of dough onto the prepared baking sheet. Bake for 8–10 minutes, or until the cookies are set but still soft. Let them cool slightly on the baking sheet.

  6. Make the Icing:
    While the cookies bake, melt the butter, cocoa powder, and milk in a small saucepan over low heat. Remove from heat and whisk in the powdered sugar and vanilla extract until smooth.

  7. Glaze & Set:
    Spoon the warm icing over the slightly cooled cookies, allowing it to spread naturally. Let the icing set before serving.
