Lamb Chops Over Lobster Mashed Potatoes with Roasted Asparagus

🛒 Ingredients:

  • 6 lamb chops
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp fresh rosemary, chopped
  • Salt and black pepper, to taste
  • 4 medium potatoes, peeled and diced
  • ½ cup heavy cream
  • 2 tbsp butter
  • ½ cup cooked lobster meat, chopped
  • 1 bunch asparagus
  • 1 tbsp olive oil (for asparagus)
  • Lemon wedges, for serving

📋 Instructions:

  1. Season the lamb – Rub with olive oil, garlic, rosemary, salt, and pepper.
  2. Cook the lamb – Grill or pan-sear over medium-high heat until your desired doneness.
  3. Make the mashed potatoes – Boil potatoes until tender, mash with butter and cream, then fold in the lobster meat.
  4. Roast the asparagus – Toss with olive oil and salt, then roast at 400°F (200°C) for 12–15 minutes until tender.
  5. Assemble and serve – Spoon the lobster mash onto plates, top with lamb chops, and serve asparagus on the side. Drizzle with pan juices or a squeeze of fresh lemon.
