Country Ranch Green Beans & Potatoes with Bacon
This hearty, flavorful dish brings together tender green beans, creamy baby potatoes, crispy bacon, and a zesty ranch kick. It’s the perfect side for family dinners, holiday gatherings, or potlucks—simple to make and packed with savory goodness!
Ingredients
- 1 lb fresh green beans, trimmed
- 1½ lbs baby potatoes (red or Yukon gold), halved or quartered
- 6 slices bacon, cooked and crumbled
- 1 packet ranch seasoning mix
- 3 tbsp butter, melted
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
Step 2: Roast the Potatoes
- In a large bowl, toss the halved or quartered potatoes with half of the melted butter.
- Spread them in a single layer on the baking sheet and season lightly with salt and pepper.
- Roast for 20 minutes, flipping halfway through, until tender and slightly golden.
Step 3: Blanch the Green Beans
- While the potatoes roast, bring a large pot of salted water to a boil.
- Add the green beans and blanch for 3–4 minutes until bright green and slightly tender.
- Drain and immediately transfer them to an ice bath (or rinse under cold water) to stop cooking.
- Drain well and pat dry.
Step 4: Toss Everything Together
- In the same large bowl, combine the roasted potatoes and blanched green beans.
- Add the remaining melted butter, minced garlic, and ranch seasoning mix. Toss gently to coat.
- Stir in half of the crumbled bacon, reserving the rest for garnish.
Step 5: Bake Again
- Spread the mixture evenly on the baking sheet.
- Bake for another 10–12 minutes, until the green beans are tender and flavors meld.
Step 6: Garnish & Serve
- Transfer to a serving dish.
- Sprinkle the remaining bacon on top and garnish with fresh parsley.
