Leftover Mashed Potato Cheese Puffs


Ingredients:

2 cups leftover mashed potatoes

1 cup shredded cheddar cheese (or any preferred cheese)

1/4 cup grated Parmesan cheese

1/4 cup chopped green onions or chives

1 large egg

1/4 cup flour

Salt and pepper, to taste

Oil, for frying (optional if baked)


Directions:

Combine Ingredients:

In a large bowl, mix the mashed potatoes, cheddar cheese, Parmesan, green onions or chives, egg, and flour. Season with salt and pepper to taste. Stir until everything is well combined.

Shape the Puffs:

Using your hands or a spoon, form the potato mixture into small balls or rounds, about 1–2 inches in diameter.

Choose Cooking Method:

For Frying: Heat oil in a skillet over medium heat. Once hot, add the potato puffs and cook until golden brown, about 3-4 minutes per side.

For Baking: Preheat oven to 400°F (200°C). Place the puffs on a parchment-lined baking sheet and bake for 15-20 minutes or until golden and crisp.

Serve Warm:

Remove from heat, let cool slightly, and serve the cheese puffs warm as a snack or side. Great with sour cream, salsa, or a dipping sauce of choice.
