Caramel Apple Pie Roll Cake 🍏🍰


Ingredients:


For the cake:


3 large eggs


1 cup granulated sugar


1 tsp vanilla extract


1 cup all-purpose flour


1 tsp baking powder


¼ tsp salt


½ tsp ground cinnamon


¼ tsp ground nutmeg


Powdered sugar, for dusting


For the caramel apple filling:


2 large apples, peeled and diced


2 tbsp unsalted butter


¼ cup brown sugar


1 tsp ground cinnamon


¼ tsp ground nutmeg


1 tbsp cornstarch (optional, for thickening)


½ cup caramel sauce (store-bought or homemade)


For the cream cheese frosting:


8 oz cream cheese, softened


¼ cup unsalted butter, softened


1 tsp vanilla extract


2 cups powdered sugar


1-2 tbsp milk (to reach desired consistency)


Instructions:


Preheat your oven to 350°F (175°C). Line a 15x10-inch jelly roll pan with parchment paper and lightly grease it.

Make the cake batter: In a large bowl, beat the eggs and sugar together until light and fluffy. Add vanilla and mix until smooth.

In a separate bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the wet mixture and mix until just combined.

Pour the batter onto the prepared pan and spread evenly. Bake for 12-15 minutes, or until the cake is set and a toothpick inserted comes out clean.

Prepare the caramel apple filling: While the cake bakes, heat butter in a skillet over medium heat. Add diced apples, brown sugar, cinnamon, and nutmeg. Cook for 5-7 minutes, until apples are tender. If you'd like a thicker filling, stir in cornstarch and cook for an additional 1-2 minutes. Remove from heat and set aside.

Make the cream cheese frosting: Beat cream cheese, butter, and vanilla together until smooth. Gradually add powdered sugar and mix until fluffy. Add milk, 1 tbsp at a time, until the frosting reaches a spreadable consistency.

Assemble the roll cake: Once the cake is baked, remove it from the pan and place it on a clean kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper. Spread a thin layer of cream cheese frosting over the cake, leaving a small border around the edges.

Spoon the caramel apple mixture over the frosting, then gently roll the cake up from one end to the other. Place seam side down on a serving platter.

Drizzle the rolled cake with caramel sauce and sprinkle with additional cinnamon if desired.
